Over the Moon thinks this is AMAZING! We had to share it to you all for Valentine's Day!!!




Ok, everyone did you all seriously think I was not going to post something totally YUMMY, and for dessert did YOU!! Well Over the Moon does have to go out with a BANG this Feb14th 2012!! It is Valentine's Day, and everyone has to have some Chocolate Wasted Cake!!! I have not tried this one personally but I am sure going to now!!! :) Thank you to Rianne of" Art of Dessert" blog for sharing this AMAZING cake with the world!! Chocolate Wasted Cake
Makes 8-12 servings
Allergy Note: contains wheat and dairy ingredients
(See notes for allergen-friendly or vegan alternatives)

cake: 
3 cups all-purpose flour
2 1/2 cups sugar
1 cup cocoa powder
2 tsp. baking soda
1 tsp. salt
2 cups milk
1 cup butter, melted
4 tsp. honey
2 tsp. vanilla extract
1/2 cup semi-sweet chocolate chips

frosting:
4 cups powdered sugar, sifted
1 cup cocoa powder
1/2 cup butter, softened to room temperature
1/3-1/2 cup whole milk (start out with 1/3 cup of milk and add more milk to your desired consistency)
1 tsp. vanilla extract

liqueur for drizzling on the cake layers (i.e. chocolate, coffee or almond)

melted chocolate for drizzling, :
2 cups semi-sweet chocolate chips*
2-3 Tbs. heavy cream or vegetable oil
semi-sweet chocolate chips for the sides of the cake

assorted chocolate candies for the top of the cake*

To make the cake:

(Note: Instead of milk, you can replace it with water or cooled brewed coffee. Instead of butter, you can use vegetable oil. Instead of honey, you can use corn syrup or agave nectar. Instead of semi-sweet chocolate chips, you can use Enjoy Life brand chocolate chips. For allergen-free alternatives for the candies, you can try Enjoy Life chocolate chips, bars or cookies)

Preheat oven to 325 350 F degrees. Grease and dust two to three 8-inch or 9-inch cake pans with cocoa powder or flour. Set aside.

Sift together flour, sugar, cocoa powder, baking soda and salt. In a separate mixing bowl, combine milk, butter, honey and vanilla extract. Slowly add the dry ingredients into the milk/butter mixture. Mix until combined. Fold in the semi-sweet chocolate chips. Pour in the batter into prepared cake pans. Bake for 30 to 45 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and wait for about 10 minutes to remove from cake pans and place on a cooling rack. Allow to cool completely before decorating.

To make the frosting:

Note: instead of butter, you can use any allowed margarine, Spectrum organic vegetable shortening, or coconut oil. Instead of milk, you can use rice milk or soy milk.

In a large mixing bowl, sift together powdered sugar and cocoa powder. Add the butter, milk and vanilla extract. Using an electric mixer, slowly mix together at a low speed. Once all the ingredients are combined, increase the speed and beat till fluffy.

To assemble the cake:

Place the first cake layer on a plate or cake circle. Lightly drizzle with liqueur. Spread an even layer of frosting. Place the second cake layer on top of the frosting. Lightly drizzle with liqueur. Cover the sides and top of the cake with frosting. Cover the sides of the cake with semi-sweet chocolate chips and cover the top with assorted chocolate candies. Drizzle the melted chocolate all over the top of the cake and let it drip down the sides of the cake. Enjoy................. :)

Over the Moon likes these cute lolli covers!




Thought these were totally cute and something that would be inexpensive, and add a personal touch than just your regular Valentine's cards you buy at the store.
Was thinking to you could change it up, and add different paper and for a birthday treat to put a different swing on it. Thank you to Rachel from a nest full of eggs blog for posting this :) Here are your list of supplies need to make these sweet little Valentine's. One more day to go. Will be adding a few tomorrow not just one sooo stay tuned...............

Supplies needed:
red cardstock
white cardstock
paper cutter
various small rubber stamps that are valentine or kid themed
red rubber stamping ink
scallop oval paper punch
double-sided adhesive
stapler
Jolly Rancher heart-shaped lollipops ( or any lolli really :) )

Over the Moon is head over heels for this raw Chocolate Torte!

Cut yourself a slice, curl up on the sofa for a while...
A giant brown slab of chocolatey goodness
Prep time 30 mins       How easy is this recipe? ** (2 stars)
Recipe Scale:
*(1 star) Your gran could make this if she had a Vitamix!
**(2 stars) You need a brain and a little bit of common sense.
***(3 stars) Some knowledge needed but don't worry, I'll show you how:-)

*****(5 stars) You use your Cuisinart more often than your toothbrush!
Ingredients - many of the more unusual ingredients can be bought from The Fresh Network
Crust
3 cups pecans
1 cup raisins, roughly chopped
1/2 cup rapadura (optional)
4 tablespoons (60ml) coconut butter, liquidised
2 teaspoons (10ml) vanilla extract or 1/2 a vanilla pod
2 teaspoons cinnamon
1/8 teaspoon Himalayan salt
Filling
2 cups (1 16oz jar) cashew butter
2 cups water
2 cups cacao powder or 1 1/2c  milled  cacao nibs + 1/2c carob powder if no cacao powder available
1 1/2 cups grated cacao butter
2 avocados
2 tablespoons vanilla extract or 2 vanilla pods
If using a Vita Mix you can use the whole pod.  If using a different blender use only the soft insides of the pod, removed with a spoon.
1 cup agave nectar
Method

-The first thing we need to do is liquidise the cacao butter and coco butter so put them in separate containers and place in a warm dehydrator.  If you don't have a dehydrator then you can do this on a stove (if you haven't sold it yet!) but you have to be really careful not to let it get too warm.  You can also do it in a glass bowl over another bowl of hot water, you know, like your Mum used to do when she made a cake with chocolate!
-Next make sure your cashew butter is out of the fridge as it will be easier to work with at room temp.
Crust
- Process all the dry ingredients in a processor (funnily enough!), then add coco butter and vanilla extract.  Be sure not to over-process nuts as they will release their oil and become 'sludge'!
- Press all the ingredients into a 9" springform pan.  If you have a different size springform, don't worry, just use what you have and see how thick the base becomes.  For example an 8" will produce a thicker base, it's really no problem! :-)
Filling
- Mix the water, cacao powder and avocados in a blender.  In a large bowl add this mixture to the cashew butter and stir well by hand.
If you have a Vita Mix you don't need to mix by hand, you can do this first step and the next step in the VM but do remember to add the cacao butter last, after everything has been blended.
- Add remaining ingredients - melted cacao butter, vanilla extract and agave to the bowl and mix again.
-When thoroughly mixed, pour the heavenly chocolate mixture on to the base in the springform and then use a spatula to even out the top.
-Lick the bowl.
- Place torte in the fridge over night to set.  It tends to get better every night it's in the fridge, if it lasts that long without you eating it all!  Seriously though, this will make a very big torte so there'll be plenty to go round :-)  You can put it in the freezer for a couple of hours to set if you're short of time as well.
- Before removing the springform, run a knife around the edge of the torte to separate it from the pan.
- Serve, eat, love.

Over the Moon thinks this Valentine's Day Wreath is amazing!
